Peat Smoked Mackerel
Mackerel landed into Scottish ports on the Aberdeenshire coast and smoked by us here on North Uist
Beautifully plump fillets of mackerel caught in the stormy waters of the North Sea by the Scottish fleet are bought to shore into the ports of Peterhead, Buckie and Aberdeen. We buy our mackerel from one of the oldest fishing firms on the north-east coast and have them delivered to our home on North Uist.
Each fillet is given a light brining in the same high quality Dead Sea salt we use for our other smoked products before a gentle smoking over peat. The flavour is full and rich and we recommend these fillets are lightly grilled on both sides before serving to release all the flavour.
Mackerel is an excellent natural source of the omega 3 fats that are known to have a very positive effect on health as part of a balanced diet.
Mackerel fillets have a small number of bones located down the centre line at the thicker end of the fillet and these can easily be removed or cut around, especially after grilling.
Peat Smoked Mackerel is a very versatile ingredient in recipes and is excellent in a kedgeree, or layered with slices of potato in cream with mustard and horseradish, and as the main ingredient in a smoked fish pâté. Try a freshly grilled fillet with a side relish of lightly sweetened stewed gooseberries or on crusty bread with a good slather of creamed horseradish sauce.
